Beef Quality & Processing

What is the difference between grass-finished and grain-finished beef?
100% grass-fed (grass-finished) beef is pasture fed for all of its life. The resulting beef texture is leaner, with a firmer bite. The flavor can be described as more earthy, herbaceous, and sometimes slightly "gamey" - with stronger beef flavor and less buttery richness than grain-finished beef. Due to the lower fat content, grass-finished beef has less marbling and higher protein content per net weight.
Grain-finished beef is grass-fed for most of its life and finished on grain for rich marbling and tenderness. We use a locally-sourced grower's feed that contains the following ingredients:
• Cracked corn - Primary energy source, helps cattle gain weight efficiently
• Cottonseed hulls - Fluffy & fibrous, adds roughage for rumen health
• Protein pellets - Protein for muscle growth, supports frame development
• Molasses - Improves palatability, adds quick energy
• Grain screenings - Typically milo, wheat, and/or oat, provides energy & fiber
• Minerals & vitamins - Balanced growth, immune health, & bone development
The beef results in a richer, sweeter, more familiar "steakhouse" flavor. The texture is juicier and more tender, with more marbling and fat that melts easily.

Is your beef USDA inspected?
Yes - Our beef is processed at a USDA-inspected facility and meets all federal inspection standards.

How long is your beef aged?
Our beef is dry-aged 14–21 days before it is processed into individual cuts for maximum flavor and tenderness.

Do you use hormones or antibiotics?
Never — raised without added hormones or unnecessary antibiotics.

How is it packaged?
Vacuum-sealed, labeled, and freezer-ready.
​

Freezer life?
18–24 months when stored frozen and sealed.

How do I order?
Simply choose your share and place your order on our website. We will contact you to confirm your beef processing date and send weekly email updates. If you have any questions about placing your order, give us a call and we'll be happy to help!​​

What payment methods do you accept?
Through our online checkout we accept payment via credit/debit and 3rd party finance options. If you prefer to pay in cash or check please give us a call and we will help place your order.​​

Do you offer custom cuts?
We currently offer custom cuts only for whole beef purchases. Half, quarter, and eighth beef shares are not customizable at this time. We hope to offer individual cuts in the future - stay tuned!

Can I split an order with someone else?
Absolutely — many customers do.

Cuts & Quantities
​
How thick are your steaks?
Standard cut: 1 inch.
​
How many steaks in a half beef?
Around 40–50 steaks, depending on the animal.
​
What cuts are included in smaller shares?
A balanced mix of premium steaks, roasts, ground beef, and other cuts.

Freezer Space & Storage
​
How much freezer space will I need?

Whole: 16–20 cu. ft.

Half: 8–10 cu. ft.

Quarter: 4–5 cu. ft.
For bulk storage, we recommend a chest freezer due to superior cold retention, energy efficiency, and maximum usable space for large items. Keep in mind that the chest freezer is a bit harder to organize & access items, and organization requires baskets/bins.
For daily or frequent access we recommend an upright freezer. Upright freezers are less space efficient (can't stack as deeply) and lose cold air when opened, but the shelves offer excellent organization and make it easy to find specific beef cuts.

Can you store my beef after processing?
We require pickup or delivery within a day or two of the processing date. We're happy to work with you for scheduling a time and delivery method that works best for you.

Is packaging safe for long-term storage?
Yes — the vacuum sealed packaging is safe to store beef for up to 2 years in freezer.

Pickup & Delivery
​
Where do I pick up my beef?
Your order will be available for pickup at our USDA processor in North Texas (about 50 miles south of Dallas). We will send you more information about your pickup before your beef processing date.

Do you deliver?
Yes — we deliver to Austin, Dallas, and Houston:

Do you ship outside Texas?
We do not offer shipping outside of Texas at this time. We are exploring smaller beef boxes for nationwide shipping in the future.
How will my order stay cold during delivery?
Your order will be transported frozen in coolers. You’ll need to have adequate freezer space ready upon arrival.

Ranch & Cattle

Can I visit the ranch?
Yes — we offer tours by appointment. Give us a call!

What breed do you raise?
Our sires (males) are Certified Black Angus bulls. Our females are Black Angus and Angus-cross.

How do you ensure animal welfare?
We believe caring for livestock is both a responsibility and a calling. We are guided by our faith and the belief that God entrusts us with stewardship over the land and the animals in our care. Because of that, we strive to raise our cattle with respect, patience, and integrity every day.
